Singaporean Cooking Class – Atlantis Dubai

In honor of Chef Eric Cheam from Mandarin Oriental Singapore visit to Dubai, Atlantis Hotel Palm Jumeirah. It was the perfect opportunity to hold a Singaporean cooking class with culinary gems of the Far East.

The class was held in Saffron, Atlantis with dishes from Asia Republic cooked by Chef Eric Cheam and Atlantis very own, Chef Vince Lee.

After a small group of bloggers, including myself and a few media exchanged pleasantries we sat down around the open kitchen to watch Chef Eric entertain us with his food quirks and culinary skills.

The first dish prepared was Chick Kut Teh, a chicken broth soup which the Chef mentioned is good to have when struck with a flu. The soup was light, with a unique flavor and ingredients which are hard to find in Dubai and are usually imported to create such dishes The soup was served with a Chinese Cruller and a good start to the class.

Next, the popular Singaporean Chili Crab with its vibrant color and Singaporean ingredients to create a delicious mud crab dish which was made within minutes and served with a fried Mantou. Truly savored!

Chef Vince took over the kitchen to prepare one of my favorite Korean BBQ Beef with Kimchi. The dark flavorsome pear and herb infused marinated beef complimented with the kimchi was a favorite amongst all.

Lastly, for dessert Chef Eric prepared Cheng Teng. A dessert which was completely new to my ears and made with ingredients such an white fungus, lotus seeds, red dated and many more. The desserts as the Chef mentioned, can either be served hot or cold and good for women with its healthy properties. The dessert was served cold to us with its slight sweet taste to end a fantastic cooking experience.

We all left with smiles and belly filled with the Chefs cooking along with treats by Atlantis and Chinese moon cakes as well!

I was so inspired by the simplicity of cooking the Singaporean Chili Crab with such fragrant ingredients, I decided to give it a try at home are was fairly pleased my the results below 🙂
