Indigo at Beach Rotana, Abu Dhabi self-defines as a ‘modern Indian restaurant with an avant-garde approach on North Indian cuisine, yet offering choices for the traditional palette’.
The plum fabric hues of the restaurants sets an undertone with brass finishing complimenting the contemporary settings of the restaurant with a sizable open-pan kitchen, as the chefs entertain and create seductive aromas and spices escaping to entice the sense.
It is a rarity to find ‘chaat’, the epitome which defines the savory snacks of India on the menu but Indigo pays tribute to the culture and culinary flavor of North India with an entrée of famed chaat aptly named ‘chaat from the streets of Delhi’ with options ranging from select favorite such as, papri chaat, dahi bhalla, stuffed golgappas, pakoras and samosa chaat to offer a taste and lasting memory. Personally, the deep fried vegetables pakoras (fritter) was least preferred out of the rest yogurt and perfectly spiced chaat options on the platter.
An assortment of kebabs included succulent tandoori lamb chops, murgh (chicken) malai tikka, rosemary prawns and one for the vegetarian taste, spiced stuffed mushroom and buttery-cheesy broccoli all of which paid due respect and catered to the strength of the restaurants tandoori capability whilst staying true to its North Indian route.
The gravy’s at Indigo are tastefully served in round cast-iron pots to retain the heat and of course, the delicious flavors and fragrance of the ordered butter chicken in a tomato and cream based curry flavored with fenugreek and an exceptional based tiger prawn moilee cooked in as a South Indian style with coconut, turmeric and lime leaves to accolade the perfectly served long grain basmati rice and freshly knead oven baked Indian bread (naan). The experience evoked the senses with the poignant flavor, seductive aromas and spices creating a journey of discovery to India all within the comfort of the table.
To end a feast of traditional and royal proportions, one of my favorite desserts rasmalai soaked in full-fat milk goodness of saffron and pistachio reduced milk was savored with a pippin’ hot masala chai.
