I’d say Chef Jeff Ramsey’s 25 course degustation is the breaking bad of the molecular cuisine.
You sit, await and watch the culinary ‘magic’, well actual scientific action take place to create statement work of art delicacies, which the famed Chef has received plenty recognitions and awards he has till this day. Well deserved!
A preview of the experience behind Umai’s open pan kitchen situated at The Oberoi, Dubai felt like a chemistry lab experiment as we glared attentively and watched his techniques, devices and ingredients all unraveled before our gleaming eyes.
A glimpse into the menu and tasters which I was lucky enough to sample from the menu included an edible mai tai from the small snacks/bites, a seared sliced wagyu strip with black truffle potato espuma – meat and potatoes and the -196 tempura cold kakiage. Also, caramel corn made from nitro poached corn mousse, pulverized popcorn in a crispy caramel shell. In addition, for a sweet ending, truffle – truffle made with 70% dark chocolate and black truffle ganache with a black bread shell. As a treat, Chef Jeff created a special dish which included a so-called ‘miracle fruit‘ that changes or say, deceives the taste buds into believing sour fruits such as lime, lemon, orange and grapefruits are sweet(er) in taste.
