Donatello Restaurant and Lounge, the lounge albeit a recent opening for diners offers a late night soiree with a live DJ set and exquisite vinos amongst other liquors whilst the adjoining restaurant servers up Italian gourmet with the traditional touch by Chef Antonio.
A glimpse into the Italian cuisine was introduced by the Chef exclaiming the need for authenticity rather than falling prey for attractive packaging. Chef pressed on the need to read beyond the bold prints of the packaging and dwell into the fine print of ones purchases.
On the menu for the cooking class as well as for lunch:
Eggplant Parmigana –A rich tomato sauce infused with garlic, onions, olive oil and fresh basil leaves cooking under a low heat with centimeter of sliced eggplants seasoned, batter fried and assembled into a dish with a ladle of sauce and slices of eggplant. Lastly, a sprinkle of freshly grated parmesan before baking the dish to its excellence.
Octopus Carpaccio – Fresh octopus cleaned, boiled to perfection and thereafter frozen to provide thin slices of octopus for the carpaccio then glazed with balsamic vinegar, olive oil, lemon and parsley.
Red Prawn Risotto – Risotto rice flavored with shallots, gambero and fish stock with a hearty melt of butter.
Cavatelli Pasta – Tomato sauce lathered over Cavatelli pasta with slices of eggplant sprinkled with grated salted ricotta cheese.
Swordfish Rolls – Swordfish rolled into an herby (parsley, basil, pine seeds, cheese and garlic) breadcrumb mix, fried and served with salmoriglio sauce.
Sweet Cheese Ravioli– Fluffed up deep-fried vanilla bean dough with a filling of fresh ricotta cheese mixed with grated orange and lemon as well as vanilla powder.
1.When purchasing pasta, look for the presence of powdering on the pasta, that’s when you know it is fresh (natural)
2.Teach your kids to cook and not just eat so that they understand what they are eating – McDonald’s is not food
3.Octopus is fresh when your finger attaches to the suckers of tentacles
4.To keep the skin on the octopus intact, dip in boiling water for a few second and pull out. Repeat for 2-3 times and then submerge completely and boil octopus (time dependent on the weight).
5.To store fresh basil leaves, place in a bag and freeze. When needed, remove desired quantity and place leaves directly into the pan to retain freshness and color. In addition, use a sharp knife to cut frozen basil leaves to avoid blackening on the leaves.
